Instructions

  1. Sift together almond flour, powdered sugar, and finely ground Earl Grey tea leaves until smooth and lump free.
  2. Beat egg whites with cream of tartar until foamy, then slowly add granulated sugar and continue whipping until stiff glossy peaks form.
  3. Fold the dry ingredients gently into the meringue until the batter flows slowly like lava.
  4. Transfer batter to a piping bag and pipe even circles onto parchment-lined baking trays.
  5. Tap trays firmly to release air bubbles and let the shells rest for 30 minutes.
  6. Bake at 300 degrees Fahrenheit for 15 to 17 minutes until the shells are set with delicate feet.
  7. Beat butter, powdered sugar, heavy cream, and Earl Grey tea leaves until creamy and smooth.
  8. Pipe filling onto cooled shells and sandwich together.
