These Frozen S’mores Cheesecake Bars are the perfect treat for any occasion, with layers of creamy marshmallow cheesecake, a buttery graham cracker crust, and a decadent chocolate ganache topping. No baking required!

  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted butter
  • 1 (8 oz) package cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup marshmallow fluff
  • 1 cup heavy whipping cream
  • 1 ½ cups milk chocolate chips
  • ½ cup heavy cream (for chocolate ganache)
  • ¼ cup crushed peanuts (optional)

Instructions

  • Prepare the Crust:
    Line an 8×8-inch baking pan with parchment paper.
    In a bowl, mix the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the pan to form the crust. Chill for 10 minutes.

  • Make the Cheesecake Layer:
    In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
    Add the marshmallow fluff and mix until well combined.

  • Whip the Cream:
    In another bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.

  • Assemble the Bars:
    Spread the cheesecake layer evenly over the graham cracker crust. Freeze for 1 hour.

  • Make the Ganache:
    Heat ½ cup of heavy cream in a small saucepan until warm. Pour over the milk chocolate chips and let sit for 2 minutes. Stir until smooth and well combined.

  • Top the Cheesecake Bars:
    Pour the chocolate ganache over the cheesecake layer, spreading it evenly. Sprinkle with crushed peanuts if desired.

  • Freeze and Serve:
    Freeze the bars for an additional 2 hours or until firm. Once frozen, slice into bars and enjoy!
