- 12 ounces linguine
- 1 pound salmon fillets, skin removed
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup freshly grated parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 cup reserved pasta water
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil.
- Season the salmon with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Cook the linguine until al dente, then reserve 1/2 cup pasta water before draining.
- Heat olive oil and 2 tablespoons butter in a large skillet over medium heat.
- Cook the salmon for 3 to 4 minutes per side, then transfer to a plate and flake gently.
- Add remaining butter and minced garlic to the skillet, then cook for about 30 seconds until fragrant.
- Pour in the heavy cream, add parmesan, and stir until smooth.
- Add a splash of reserved pasta water to loosen the sauce.
- Toss the drained pasta in the sauce until coated.
- Fold in the flaked salmon, lemon juice, lemon zest, parsley, and remaining black pepper.
- Serve warm with extra parmesan and parsley if desired.
Notes
- Use freshly grated parmesan for the smoothest sauce.
- Add pasta water slowly so the sauce stays creamy but not thin.
- Fold the salmon gently to keep visible tender flakes.
- Reheat leftovers slowly with a splash of cream, milk, or water.
