- 4 cod fillets, about 6 ounces each
- 2 tablespoons white miso paste
- 3 tablespoons unsalted butter, melted
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 lemon, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt, optional
Instructions
- Preheat the oven to 400°F.
- In a small bowl, whisk together white miso paste, melted butter, olive oil, minced garlic, lemon juice, parsley, dill, black pepper, and salt if using.
- Lightly grease a medium baking dish.
- Place the cod fillets in the dish and spoon the miso herb sauce over the top.
- Add thin lemon slices over each fillet.
- Bake for 12 to 15 minutes, until the cod flakes easily with a fork.
- Spoon warm pan sauce over the cod before serving.
Notes
- Pat cod dry before adding sauce for the best texture.
- Use white miso for a milder, slightly sweet flavor.
- Avoid adding too much salt because miso is already salty.
- Serve with rice, roasted vegetables, noodles, or potatoes.
