Garlic Ritz Cracker Chicken

Ingredients

  • 4 medium boneless skinless chicken breasts, about 1 1/2 pounds, pounded to even thickness
  • 2 sleeves Ritz crackers, about 60 crackers, crushed
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon garlic powder
  • 3 cloves fresh garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1/4 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9 by 13 inch baking dish.
  2. In a bowl, combine the crushed Ritz crackers, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  3. In a separate bowl, stir the melted butter with 1 clove of minced garlic.
  4. Pat the chicken dry, then dip each piece into the garlic butter.
  5. Press each buttered chicken piece firmly into the cracker mixture until fully coated.
  6. Place the coated chicken pieces in the prepared baking dish.
  7. Bake for 25 to 30 minutes, or until golden and the chicken reaches 165°F in the thickest part.
  8. While the chicken bakes, warm the sour cream, chicken broth, remaining minced garlic, and a small pinch of salt in a saucepan over low heat until smooth.
  9. Spoon the creamy garlic sauce over the baked chicken and finish with chopped parsley.
  10. Serve warm while the crust is crisp.

Notes

  • Pat the chicken dry before coating so the cracker crust sticks better.
  • Use low heat for the sauce so the sour cream stays smooth.
  • For the crispiest texture, add the sauce right before serving.
  • Reheat leftovers in the oven instead of the microwave when possible.
