- 4 medium yellow squash, thinly sliced
- 2 medium zucchini, thinly sliced
- 4 tablespoons butter, divided
- 4 cloves garlic, minced
- 1 small onion, finely diced
- 1 1/2 cups shredded cheddar cheese
- 1 cup sour cream
- 2 cups crushed Ritz crackers
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, combine sour cream, cheddar cheese, Parmesan cheese, salt, pepper, and paprika.
- Melt 2 tablespoons butter in a skillet. Sauté onion and garlic until fragrant. Add squash and zucchini and cook for 5 to 7 minutes. Drain excess moisture.
- Stir cooked vegetables into the cheese mixture and mix well.
- Transfer mixture to the prepared baking dish.
- Combine crushed Ritz crackers with remaining melted butter and sprinkle evenly over the casserole.
- Bake for 30 to 35 minutes until bubbling and golden brown.
- Let rest for 10 minutes before serving.
Notes
- Drain the squash well to prevent excess moisture.
- Freshly shredded cheese melts more smoothly.
- The casserole can be assembled one day ahead and refrigerated.
- Allow resting time before serving for cleaner slices.
