  • 1/4 cup barberries (dried, or goji berries or soft cranberries)
  • 3 dried apricots
  • 2 dried figs
  • 1/4 cup almonds (raw)
  • 1 tbsp raw sunflower seeds
  • 1 tbsp raw pumpkin seeds
  • 1/2 cup dark chocolate (for melting and coating)

Instructions

  1. Prepare Ingredients: Chop the almonds, apricots, and figs into small chunks. For chewier bars, blend these ingredients briefly until they form a coarse mixture.
  2. Prepare the Tray: Line a small baking tray with parchment paper or use a silicone mold for individual bars.
  3. Mix Ingredients: In a bowl, combine the chopped nuts, dried fruit, and seeds. Mix them well to evenly distribute all ingredients.
  4. Form the Dough: Press the mixture tightly into the lined tray or silicone mold, using a flat object like the bottom of a glass to compact everything as much as possible. You can spread the mixture throughout the tray or pile it on one side if you prefer thicker bars.
  5. Chill: Place the tray in the freezer for about 30 minutes to make the bars easier to cut.
  6. Melt the Chocolate: While the bars are chilling, melt the dark chocolate. You can do this in a double boiler or in the microwave in short bursts, stirring well after each burst until fully melted and smooth.
  7. Cut and Coat: Once the mixture has chilled and set, cut it into bars of your desired size. Pour or drizzle the melted chocolate over each bar. Allow the chocolate to harden before enjoying.
  8. Store: Store the bars in an airtight container. They can be kept at room temperature or in the fridge, depending on your preference.
