Ingredients

Scale
  • 1 cup cornmeal mix
  • 1 tsp salt
  • 1 tsp sugar
  • 3/4 cup boiling water
  • Oil for frying (extra virgin olive oil recommended)

Instructions

  1. Mix the Ingredients: In a bowl, combine the cornmeal mix, salt, and sugar. Add the boiling water and stir until well combined. The mixture should be thick but pourable.
  2. Heat the Oil: Heat oil in a skillet over medium-high heat.
  3. Form the Cornbread: Use a regular dinner spoon to scoop two spoonfuls of the mixture and place it into the hot oil. Flatten the mixture slightly with the back of the spoon.
  4. Cook the Cornbread: Cook each piece for about 1 minute on each side or until golden brown and crispy.
  5. Serve: Remove the cornbread from the skillet and drain on paper towels. Serve hot and enjoy!
