- 4 cod fillets (about 6 oz each)
- 3 tablespoons white miso paste
- 2 tablespoons soy sauce
- 1 tablespoon erythritol or keto sweetener
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 2 ripe avocados
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- Microgreens for garnish (optional)
Instructions
- Preheat oven to 400°F and grease a baking dish.
- In a saucepan, combine miso paste, soy sauce, sweetener, sesame oil, garlic, and ginger. Warm until smooth.
- Place cod fillets in baking dish and season with salt and pepper.
- Brush glaze over fillets evenly.
- Bake for 12 to 15 minutes, then broil for 2 minutes.
- Mash avocados with lime juice, olive oil, salt, and pepper.
- Serve cod over avocado puree and garnish with microgreens.
Notes
- Do not overcook the cod to keep it tender.
- Use ripe avocados for best texture.
- Adjust sweetness of glaze to taste.
