Keto Miso Glazed Cod

Ingredients

  • 4 cod fillets (about 6 oz each)
  • 3 tablespoons white miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon erythritol or keto sweetener
  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Microgreens for garnish (optional)

Instructions

  1. Preheat oven to 400°F and grease a baking dish.
  2. In a saucepan, combine miso paste, soy sauce, sweetener, sesame oil, garlic, and ginger. Warm until smooth.
  3. Place cod fillets in baking dish and season with salt and pepper.
  4. Brush glaze over fillets evenly.
  5. Bake for 12 to 15 minutes, then broil for 2 minutes.
  6. Mash avocados with lime juice, olive oil, salt, and pepper.
  7. Serve cod over avocado puree and garnish with microgreens.

Notes

  • Do not overcook the cod to keep it tender.
  • Use ripe avocados for best texture.
  • Adjust sweetness of glaze to taste.
