- 6 cups fresh broccoli florets
- 2 cups shredded cheddar cheese
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 3 cloves garlic, minced
- 4 tablespoons unsalted butter, melted
- 2 sleeves Ritz crackers, crushed
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Blanch the broccoli florets in boiling water for 2 minutes, then drain very well.
- In a large bowl, mix cream cheese, sour cream, garlic, onion powder, salt, pepper, and 1 1/2 cups cheddar cheese until smooth.
- Fold the drained broccoli into the cheese mixture until evenly coated.
- Spread the mixture into the prepared baking dish and sprinkle the remaining 1/2 cup cheddar cheese over the top.
- Mix crushed Ritz crackers with melted butter, then sprinkle evenly over the casserole.
- Bake for 30 minutes, until the filling is bubbly and the topping is golden brown.
- Let rest for 5 to 10 minutes before serving warm.
