Maple Miso Glazed Cod

Tender cod fillets coated in a rich maple miso glaze, baked until perfectly flaky and served with rice and greens for a cozy, flavor-packed dinner.

Ingredients

  • 4 cod fillets, about 6 ounces each
  • 3 tablespoons white miso paste
  • 3 tablespoons pure maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 3 cups cooked white rice
  • 4 small baby bok choy, halved
  • 2 cups spinach or Asian greens
  • 1 tablespoon sesame seeds
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F and lightly grease a baking dish.
  2. In a small bowl, whisk together white miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, garlic, and ginger until smooth.
  3. Pat the cod fillets dry and place them in the prepared baking dish.
  4. Brush or spoon the glaze evenly over each cod fillet.
  5. Bake for 10 to 12 minutes until the fish flakes easily with a fork. Broil for the last 1 to 2 minutes if desired for extra caramelization.
  6. While the fish cooks, sauté the bok choy and greens in a skillet until tender.
  7. Serve the cod over cooked rice with sautéed greens and garnish with sesame seeds and lemon wedges.

Notes

  • Use fresh cod for the best texture and flavor.
  • Do not overcook the fish to keep it tender and flaky.
  • Add chili flakes if you prefer a spicy version.
  • The glaze can be made ahead and refrigerated for up to 3 days.
