- purple and yellow gel food coloring
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 300°F and line baking sheets with parchment paper.
- Sift almond flour and powdered sugar together.
- Whip egg whites until foamy, then add sugar and beat to stiff peaks.
- Fold dry ingredients into meringue gently.
- Divide batter and add food coloring, swirl lightly.
- Pipe onto baking sheet.
- Bake for 14 to 16 minutes.
- Cool completely before filling.

- Let shells rest before baking to form a skin
- Avoid overmixing batter
- Use gel food coloring for best results
