Ingredients
Scale
- 1 1/2 pounds fresh cod fillets
- 3 tablespoons white miso paste
- 2 tablespoons low sodium soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon fresh grated ginger
- 2 cloves garlic, minced
- 12 large butter lettuce leaves
- 2 green onions, sliced
- 1 tablespoon toasted sesame seeds
- 1 small red chili, finely chopped
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Whisk together white miso paste, soy sauce, sesame oil, honey, rice vinegar, ginger, and garlic in a bowl until smooth.
- Place cod fillets on the prepared baking sheet and coat evenly with the glaze.
- Bake for 10 to 12 minutes until the cod flakes easily with a fork.
- Broil for 1 to 2 minutes for lightly caramelized edges.
- Arrange butter lettuce leaves on a serving platter.
- Flake the cooked cod into large pieces and place into lettuce cups.
- Top with green onions, toasted sesame seeds, and chopped red chili.
- Serve immediately while warm and fresh.
Notes
- Pat the cod dry before adding the glaze for better caramelization.
- Butter lettuce works best because it stays flexible and crisp.
- Add avocado or shredded carrots for extra texture and freshness.
- Use gluten free soy sauce if needed for a gluten free version.
