Miso Cod with Soba Noodles

Ingredients

  • 4 cod fillets, about 6 ounces each, skinless
  • 3 tablespoons white miso paste
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 8 ounces soba noodles
  • 4 cups low sodium vegetable broth
  • 3 cups baby bok choy, halved or chopped
  • 3 green onions, thinly sliced
  • 1 tablespoon sesame seeds
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 400°F and line a baking dish with parchment or lightly brush it with oil.
  2. In a bowl, whisk together white miso paste, soy sauce, mirin, rice vinegar, honey, ginger, garlic, and sesame oil until smooth.
  3. Place the cod fillets in the baking dish and spoon the glaze over the top. Marinate in the fridge for 20 to 30 minutes.
  4. Cook the soba noodles according to package directions, then rinse under cool water and set aside.
  5. Bake the cod for 10 to 12 minutes, then broil for 1 to 2 minutes until glossy and lightly caramelized.
  6. Warm the vegetable broth in a small pot, add the baby bok choy, and simmer for 2 to 3 minutes until just tender. Stir in lime juice.
  7. Divide the soba noodles between bowls, ladle in broth and bok choy, then top with glazed cod, green onions, and sesame seeds.

Notes

  • Use white miso for the mildest, sweetest flavor.
  • Do not marinate cod longer than 30 minutes because it is delicate.
  • Rinse soba noodles after cooking so they stay springy.
  • Watch closely while broiling because the glaze can darken quickly.
