- 4 cod fillets, about 6 ounces each
- 3 tablespoons white miso paste
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups cooked jasmine rice
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 1 cup shelled edamame, cooked
- 3 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a small bowl whisk together white miso paste, soy sauce, honey, sesame oil, garlic, and ginger until smooth.
- Pat cod fillets dry and place on prepared baking sheet.
- Brush the miso glaze generously over the cod fillets.
- Bake for 12 to 15 minutes until the cod is flaky and lightly caramelized.
- Divide warm jasmine rice between serving bowls.
- Arrange avocado, cucumber, and edamame around the rice.
- Place cod on top and garnish with green onions and sesame seeds.
- Serve immediately while warm.
Notes
- Pat the cod dry before glazing for better caramelization.
- Use fresh ginger for the brightest flavor.
- Store avocado separately if meal prepping.
- Extra glaze can be drizzled over rice before serving.
