Nobu Style Miso Black Cod

Nobu Style Miso Black Cod

Tender black cod marinated in a sweet and savory white miso glaze, then roasted until buttery, flaky, and lightly caramelized for a restaurant-style Japanese seafood dinner.

  • Total Time: 27 minutes plus marinating time
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 black cod fillets, about 6 ounces each
  • 1/2 cup white miso paste
  • 1/4 cup mirin
  • 2 tablespoons low sodium soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh grated ginger
  • 2 green onions, thinly sliced
  • 1 teaspoon sesame seeds

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking tray with parchment paper.
  2. Whisk together white miso paste, mirin, soy sauce, brown sugar, sesame oil, and grated ginger until smooth.
  3. Place black cod fillets in a shallow dish and coat evenly with the marinade.
  4. Cover and refrigerate for at least 8 hours or overnight.
  5. Transfer the fish to the prepared tray and roast for 10 to 12 minutes until flaky and lightly caramelized.
  6. Broil for 1 to 2 minutes for extra color and glossy finish.
  7. Garnish with green onions and sesame seeds before serving.

Notes

  • Marinating overnight creates deeper flavor and better texture.
  • Watch carefully while broiling because the glaze caramelizes quickly.
  • Serve with steamed rice and vegetables for a complete meal.
  • Salmon can be substituted for black cod if needed.
