- 1 ½ pounds boneless skinless chicken thighs, cut into chunks
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 1 ½ cups long grain white rice, uncooked
- 4 cups chicken broth
- 1 cup heavy cream
- 1 ½ cups freshly grated asiago cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large deep skillet over medium heat.
- Season the chicken with salt, pepper, and Italian seasoning.
- Add olive oil and butter to the skillet, then sear the chicken until golden brown on both sides. Remove and set aside.
- Add diced onion and garlic to the same skillet and cook until softened and fragrant.
- Stir in the uncooked rice and cook for 1 minute.
- Pour in the chicken broth and heavy cream, stirring well.
- Return the chicken to the skillet and cover.
- Simmer for about 20 minutes until the rice is tender and creamy.
- Stir in the grated asiago cheese until fully melted and smooth.
- Top with chopped parsley and serve warm.
Notes
- Freshly grated asiago melts smoother than pre-shredded cheese.
- Add a splash of broth while reheating leftovers to keep the rice creamy.
- Chicken breast can be substituted for chicken thighs if preferred.
- Spinach or mushrooms make excellent additions to this skillet meal.
