- 1 pound fresh salmon fillet, skin removed and cut into chunks
- 12 ounces penne pasta
- 4 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 lemon, sliced and juiced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large deep skillet or Dutch oven over medium heat.
- Add olive oil and butter, then stir in minced garlic and cook until fragrant.
- Add salmon chunks and cook gently for 2 to 3 minutes until lightly opaque. Remove salmon and set aside.
- Pour in chicken broth and heavy cream, then stir in penne pasta, salt, and black pepper.
- Bring to a gentle simmer and cook for 12 to 14 minutes, stirring occasionally, until pasta is tender.
- Return salmon to the skillet and stir in parmesan cheese until melted and creamy.
- Add lemon juice, lemon slices, and parsley.
- Serve hot with extra parmesan if desired.
Notes
- Freshly grated parmesan melts more smoothly into the sauce.
- Add a splash of broth when reheating leftovers to loosen the sauce.
- Do not overcook the salmon to keep it tender and flaky.
- Spinach or peas can be added during the final few minutes for extra color and flavor.
