- 3/4 cup creamy peanut butter, divided
- 1/3 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Mix 1/2 cup peanut butter with powdered sugar until thick. Scoop teaspoon-sized portions onto a plate and chill for 20 minutes.
- In a mixing bowl, cream butter, granulated sugar, brown sugar, and the remaining 1/4 cup peanut butter until smooth.
- Mix in the egg and vanilla extract.
- In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Fold in the semi-sweet chocolate chips.
- Flatten a tablespoon of dough, place one chilled peanut butter portion in the center, cover with more dough, and seal completely.
- Place stuffed dough balls on the baking sheet and bake for 9 to 11 minutes.
- Let the cookies rest on the baking sheet for 5 minutes, then transfer to a cooling rack.
Notes
- Chill the peanut butter filling so it stays centered during baking.
- Do not overbake, the centers should still look soft when removed from the oven.
- Press a few extra chocolate chips on top after baking for a bakery-style finish.
- Store in an airtight container at room temperature for up to 4 days.
