These rich and indulgent cheesecake bars combine smooth cheesecake with a sweet peanut-caramel mixture, coated in a layer of milk chocolate and sprinkled with crunchy peanuts. Perfect for dessert lovers who enjoy the combination of peanut, caramel, and chocolate!

For the Cheesecake Batter:

  • 400g cream cheese
  • 75g granulated sugar
  • 8g vanilla sugar
  • 25g cornstarch
  • 2 eggs

For the Peanut-Caramel Mixture:

  • 50g caramel
  • 30g peanuts (finely chopped)

For the Coating:

  • 300g milk chocolate
  • 20ml sunflower oil
  • 20g peanuts (finely chopped)

Instructions

  • Make Cheesecake Batter:
    Mix cream cheese, granulated sugar, and vanilla sugar in a bowl. Add cornstarch and mix until smooth. Fold in the eggs one by one, ensuring each egg is fully incorporated before adding the next.
  • Prepare Peanut-Caramel Mixture:
    Finely chop the peanuts and mix with the caramel.
  • Pipe Layers:
    Transfer both the cheesecake batter and peanut-caramel mixture into separate piping bags. Pipe layers into a silicone mold, starting with the cheesecake batter, followed by the peanut-caramel mixture, and finishing with the cheesecake batter.
  • Bake:
    Place the molds in a preheated oven at 115°C (239°F) for 22-25 minutes. After baking, turn off the oven and let the cheesecakes cool slowly with the oven door closed. Refrigerate overnight for best results.
  • Melt Chocolate:
    Melt the milk chocolate with sunflower oil in a double boiler until smooth and creamy.
  • Coat Cheesecakes:
    Finely chop the remaining peanuts and add them to the melted chocolate. Dip each cheesecake completely into the melted chocolate to coat it.
  • Set:
    Place the coated cheesecakes on parchment paper and allow the chocolate to set until firm.

  • Be sure to refrigerate the cheesecake bars overnight to allow the flavors to meld and the texture to set properly.
  • You can adjust the amount of peanuts based on your preference for crunchiness.
