  • 3 cups cooked white rice (preferably day-old rice for better texture)
  • 2 tablespoons oil (vegetable or sesame oil works well)
  • 1 cup frozen peas and carrots, thawed
  • 1 onion, chopped
  • 1 tablespoon minced garlic (about 3 cloves)
  • 2 eggs, slightly beaten
  • 3 tablespoons soy sauce
  • Ground black pepper to taste
  • Green onions, chopped for garnish (optional)

Instructions

  • Heat 1 tablespoon of oil in a large pan over medium heat. Add the beaten eggs and scramble them until fully cooked. Set the eggs aside.
  • In the same pan, add another tablespoon of oil. Sauté the chopped onion and minced garlic until fragrant, about 2-3 minutes.
  • Add the thawed peas and carrots to the pan, and stir-fry for another 2-3 minutes, until they are tender.
  • Add the cooked rice to the pan, breaking up any clumps. Pour in the soy sauce and stir well to combine all the ingredients.
  • Add the scrambled eggs back into the pan and mix everything together.
  • Stir-fry for an additional 3-4 minutes until everything is heated through.
  • Season with ground black pepper to taste and garnish with chopped green onions if desired.
  • Serve immediately and enjoy!

Notes

  • Day-old rice works best for fried rice as it’s drier and less sticky, which helps create that authentic fried rice texture.
  • For extra flavor, you can add a splash of sesame oil or a pinch of crushed red pepper flakes for heat.
  • Customize with additional vegetables like bell peppers, corn, or mushrooms to suit your taste.
