Instructions

  • Mix the Dough: In a large bowl, combine the flour, garlic, rosemary, salt, pepper, and yeast. Using a wooden spoon or your hand, add water and mix until a wet, sticky dough forms, about 30 seconds.
  • Let the Dough Rise: Cover the bowl tightly with plastic wrap and let the dough stand at room temperature for 18 to 24 hours, until the surface is dotted with bubbles.
  • Prepare the Skillet: Lightly oil a 10-inch cast iron skillet or coat it with nonstick spray, then sprinkle with cornmeal.
  • Shape the Dough: On a lightly floured surface, gently shape the dough into a round shape. Transfer the dough into the prepared skillet.
  • Second Rise: Cover the dough with a clean dishtowel and let it stand at room temperature for about 2 hours, or until the dough has doubled in size and doesn’t spring back when poked with a finger.
  • Preheat the Oven: Preheat the oven to 450°F (230°C).
  • Bake the Bread: Place the skillet in the oven and bake for 30-40 minutes, or until the bread is golden brown.
