Salmon Pasta with Cherry Tomatoes

Creamy salmon pasta with cherry tomatoes is a rich and comforting dinner packed with flaky salmon, silky Parmesan cream sauce, and juicy bursts of sweet tomatoes tossed with tender fusilli pasta.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 12 ounces fusilli pasta
  • 2 medium salmon fillets, about 12 ounces total
  • 1 1/2 cups cherry tomatoes
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Season the salmon with salt, pepper, and Italian seasoning.
  3. Heat olive oil and butter in a deep skillet over medium heat.
  4. Cook the salmon for about 4 minutes per side until flaky and fully cooked. Remove and break into chunks.
  5. In the same skillet, sauté garlic for 1 minute.
  6. Add cherry tomatoes and cook until softened and slightly burst.
  7. Stir in heavy cream and Parmesan cheese until smooth and creamy.
  8. Cook fusilli pasta until al dente and reserve 1/2 cup pasta water before draining.
  9. Add pasta and salmon to the skillet and toss gently.
  10. Add reserved pasta water gradually until the sauce becomes silky.
  11. Sprinkle parsley over the pasta and serve warm.

Notes

  • Reserve pasta water to help create a silky sauce texture.
  • Use freshly grated Parmesan for the smoothest sauce.
  • Do not overcook the salmon to keep it tender and flaky.
  • Add a squeeze of lemon before serving for extra brightness.
