- 12 ounces fusilli pasta
- 2 medium salmon fillets, about 12 ounces total
- 1 1/2 cups cherry tomatoes
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil.
- Season the salmon with salt, pepper, and Italian seasoning.
- Heat olive oil and butter in a deep skillet over medium heat.
- Cook the salmon for about 4 minutes per side until flaky and fully cooked. Remove and break into chunks.
- In the same skillet, sauté garlic for 1 minute.
- Add cherry tomatoes and cook until softened and slightly burst.
- Stir in heavy cream and Parmesan cheese until smooth and creamy.
- Cook fusilli pasta until al dente and reserve 1/2 cup pasta water before draining.
- Add pasta and salmon to the skillet and toss gently.
- Add reserved pasta water gradually until the sauce becomes silky.
- Sprinkle parsley over the pasta and serve warm.
Notes
- Reserve pasta water to help create a silky sauce texture.
- Use freshly grated Parmesan for the smoothest sauce.
- Do not overcook the salmon to keep it tender and flaky.
- Add a squeeze of lemon before serving for extra brightness.
