Salmon Pasta with Peas

Creamy salmon pasta with peas is a cozy, elegant dinner made with tender salmon chunks, penne pasta, sweet peas, parmesan, garlic, and a silky cream sauce.

Ingredients

  • 12 ounces penne pasta
  • 2 salmon fillets, about 12 ounces total, cut into chunks
  • 1 cup frozen peas
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Season the salmon chunks with salt and black pepper.
  3. Heat olive oil and butter in a large skillet over medium heat.
  4. Add the salmon and cook for 3 to 4 minutes until lightly golden and flaky, then remove it from the skillet.
  5. Add minced garlic to the same skillet and cook for about 30 seconds until fragrant.
  6. Pour in the heavy cream and stir in the parmesan cheese until the sauce becomes smooth.
  7. Add the peas and simmer gently for 2 to 3 minutes.
  8. Cook the penne pasta until al dente, then drain it while reserving a little pasta water.
  9. Add the pasta to the sauce and toss until coated, adding reserved pasta water if needed.
  10. Gently fold the salmon back into the pasta.
  11. Stir in lemon juice and finish with chopped parsley before serving.

Notes

  • Use freshly grated parmesan for the smoothest sauce.
  • Do not overcook the salmon, it should stay tender and flaky.
  • Add a splash of pasta water if the sauce becomes too thick.
  • Fresh dill can replace parsley for a brighter seafood flavor.
