- 1 1/2 pounds white fish fillets, such as cod or haddock
- 1 sleeve Ritz crackers, about 32 crackers, crushed
- 6 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 lemon, sliced into thin rounds
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon paprika
- 3/4 teaspoon salt, divided
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F.
- In a small bowl, stir together the crushed Ritz crackers, melted butter, minced garlic, lemon juice, parsley, paprika, 1/4 teaspoon salt, and black pepper.
- Brush a baking dish or rimmed sheet pan with olive oil, then arrange the lemon slices in the bottom.
- Pat the fish dry, season it with the remaining 1/2 teaspoon salt, and place it over the lemon slices.
- Spoon the cracker mixture evenly over the fish fillets and gently press it onto the top.
- Bake for 12 to 15 minutes, until the fish flakes easily with a fork and the topping is golden.
- Let the fish rest for 3 minutes, then spoon a little pan butter over the top and serve warm.
Notes
- Pat the fish very dry before baking so the topping stays crisp.
- Use similarly sized fillets so they cook evenly.
- Broil for 1 minute at the end if the fish is cooked but the topping needs more color.
- Fresh lemon gives the best bright flavor.
