Sheet Pan Miso Cod & Veggies

A quick and flavorful one-pan dinner with tender cod fillets, roasted broccolini, and a glossy white miso glaze with honey, ginger, garlic, and fresh chili.

Ingredients

  • 4 cod fillets, about 6 ounces each, skinless
  • 1 pound broccolini, trimmed
  • 3 tablespoons white miso paste
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely grated
  • 1 teaspoon fresh ginger, finely grated
  • 1 small red chili, thinly sliced
  • 1/4 teaspoon black pepper
  • 1 teaspoon sesame seeds, optional

Instructions

  1. Preheat the oven to 425°F and line a rimmed baking sheet with parchment paper.
  2. In a small bowl, whisk together the white miso paste, low-sodium soy sauce, honey, rice vinegar, toasted sesame oil, garlic, ginger, and black pepper until smooth.
  3. Place the trimmed broccolini on the baking sheet, drizzle with olive oil, and toss gently to coat.
  4. Nestle the cod fillets among the broccolini and spoon the miso glaze over the fish.
  5. Add the sliced red chili on top of the cod.
  6. Roast for 12 to 15 minutes, until the cod flakes easily with a fork and the broccolini is tender with lightly crisp edges.
  7. Sprinkle with sesame seeds if using, rest for 2 minutes, then serve warm.

Notes

  • Pat the cod dry before adding the glaze so it sticks better.
  • Use white miso for the mildest, smoothest flavor.
  • Do not overcrowd the baking sheet or the vegetables may steam instead of roast.
  • Serve with rice, noodles, quinoa, or cucumber salad.
