- 4 cod fillets, about 6 ounces each, skinless
- 1 pound broccolini, trimmed
- 3 tablespoons white miso paste
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 1 tablespoon olive oil
- 2 cloves garlic, finely grated
- 1 teaspoon fresh ginger, finely grated
- 1 small red chili, thinly sliced
- 1/4 teaspoon black pepper
- 1 teaspoon sesame seeds, optional
Instructions
- Preheat the oven to 425°F and line a rimmed baking sheet with parchment paper.
- In a small bowl, whisk together the white miso paste, low-sodium soy sauce, honey, rice vinegar, toasted sesame oil, garlic, ginger, and black pepper until smooth.
- Place the trimmed broccolini on the baking sheet, drizzle with olive oil, and toss gently to coat.
- Nestle the cod fillets among the broccolini and spoon the miso glaze over the fish.
- Add the sliced red chili on top of the cod.
- Roast for 12 to 15 minutes, until the cod flakes easily with a fork and the broccolini is tender with lightly crisp edges.
- Sprinkle with sesame seeds if using, rest for 2 minutes, then serve warm.
Notes
- Pat the cod dry before adding the glaze so it sticks better.
- Use white miso for the mildest, smoothest flavor.
- Do not overcrowd the baking sheet or the vegetables may steam instead of roast.
- Serve with rice, noodles, quinoa, or cucumber salad.
