- 4 cod fillets, about 6 ounces each
- 3 tablespoons white miso paste
- 2 tablespoons maple syrup or honey
- 1 tablespoon rice vinegar
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon fresh ginger, finely grated
- 1 small garlic clove, finely grated
- 3 cups cooked white rice, for serving
- 1 teaspoon sesame seeds, for garnish
- 2 tablespoons fresh chives or green onion, chopped
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper or foil.
- In a small bowl, whisk together white miso paste, maple syrup or honey, rice vinegar, low-sodium soy sauce, toasted sesame oil, grated ginger, and grated garlic until smooth.
- Pat the cod fillets dry and place them on the prepared baking sheet with space between each piece.
- Brush or spoon the miso glaze evenly over the top and sides of the cod fillets.
- Bake for 8 minutes, then switch to broil and cook for 2 to 4 minutes more, watching closely, until the glaze is bubbling and lightly caramelized.
- Check that the cod flakes easily and reaches 145°F in the thickest part.
- Let the fish rest for 2 minutes, then garnish with sesame seeds and chopped chives or green onion.
- Serve over warm cooked white rice with any extra pan glaze spooned on top.
Notes
- Pat the cod very dry before glazing so the sauce clings well.
- Use white miso for the mildest, slightly sweet flavor.
- Watch closely while broiling because the glaze can darken quickly.
- For a gluten free version, use tamari and make sure the miso is gluten free.
