- 2 pounds boneless skinless chicken
- 1 cup chicken broth
- 8 ounces cream cheese, softened and cubed
- 1 cup heavy cream
- 1 cup freshly grated Asiago cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 2 tablespoons fresh parsley, chopped
Instructions
- Turn the slow cooker to low for a 4 to 5 hour cook time, or high for a 2 to 3 hour cook time.
- In a mixing bowl, stir together chicken broth, softened cream cheese, garlic, Italian seasoning, onion powder, salt, black pepper, and paprika until mostly combined.
- Lightly coat the inside of the slow cooker with cooking spray or a thin layer of oil.
- Place the chicken in the slow cooker, then pour the creamy broth mixture over the top.
- Cover and cook until the chicken is tender and reaches 165°F.
- During the last 20 to 30 minutes, stir in the heavy cream and freshly grated Asiago cheese.
- Stir in the cornstarch slurry if a thicker sauce is desired, then cover for another 10 minutes.
- Whisk the sauce gently until smooth, spoon it over the chicken, and finish with fresh parsley before serving.
Notes
- Use freshly grated Asiago for the smoothest sauce.
- Add the cream and cheese near the end to help prevent separation.
- Serve over pasta, rice, mashed potatoes, or vegetables.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
