- 2 pounds boneless skinless chicken thighs
- 2 cans (10.5 ounces each) cream of chicken soup
- 1 cup sour cream
- 6 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 sleeves Ritz crackers, crushed
- 6 tablespoons unsalted butter, melted
- 6 cups cooked white rice
- 1 pound fresh green beans, cooked
Instructions
- Lightly coat the slow cooker insert with cooking spray.
- In a mixing bowl, combine cream of chicken soup, sour cream, minced garlic, onion powder, garlic powder, salt, and black pepper until smooth.
- Place chicken thighs evenly in the bottom of the slow cooker.
- Pour the creamy garlic mixture over the chicken and spread evenly.
- Cover and cook on low for 6 hours, or until the chicken is tender.
- Shred the chicken directly in the slow cooker and stir into the sauce.
- Mix crushed Ritz crackers with melted butter.
- Sprinkle the cracker mixture evenly over the casserole.
- Cover and cook for an additional 20 minutes.
- Serve over cooked white rice with green beans on the side.
Notes
- Use freshly minced garlic for the best flavor.
- Add chopped parsley before serving for extra color.
- Allow the casserole to rest for 5 minutes before serving.
- Store leftovers in an airtight container for up to 4 days.
