SMASHED POTATO TACO SALAD

Ingredients

  • 1.5 pounds baby potatoes
  • 3 tablespoons olive oil
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 cup cherry tomatoes, halved
  • 2 avocados, sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup crumbled cheese
  • 1/2 cup sour cream or creamy sauce
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F.
  2. Toss potatoes with olive oil, salt, and pepper.
  3. Place on a lined baking sheet.
  4. Roast, then smash potatoes and return to oven until crispy.
  5. Cook ground beef with taco seasoning until fully cooked.
  6. Layer potatoes with beef, tomatoes, avocado, onion, cheese, and sauce.
  7. Finish with cilantro and lime, then serve.
