- 1.5 pounds baby potatoes
- 3 tablespoons olive oil
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1 cup cherry tomatoes, halved
- 2 avocados, sliced
- 1 small red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup crumbled cheese
- 1/2 cup sour cream or creamy sauce
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F.
- Toss potatoes with olive oil, salt, and pepper.
- Place on a lined baking sheet.
- Roast, then smash potatoes and return to oven until crispy.
- Cook ground beef with taco seasoning until fully cooked.
- Layer potatoes with beef, tomatoes, avocado, onion, cheese, and sauce.
- Finish with cilantro and lime, then serve.
Notes
- Use small potatoes for best texture
- Do not overcrowd the pan
- Add sauce just before serving
