These Spicy Garlic and Sesame Fries are a bold and flavorful twist on classic fries. Coated in a garlicky, sesame-rich sauce with a touch of heat, they’re perfect for sharing as a snack or side dish!

Ingredients

  • For the Fries:
    • 500 g frozen fries
    • 2 tbsp white sesame seeds
    • 2 tbsp black sesame seeds
    • 2 tbsp neutral oil (e.g., sunflower, vegetable, rapeseed)
    • 8 garlic cloves, minced
    • 2 tbsp gochujang (or alternative sauces)
    • 2 tbsp light soy sauce
    • 1 tbsp rice vinegar
    • 1 tsp sugar
    • 1/2 tsp white pepper
    • 2 tsp toasted sesame oil
    • Handful of spring onion greens, finely sliced
  • For the 5-Spice Mayonnaise:
    • 2 tbsp mayonnaise (or vegan mayo)
    • 1 tsp toasted sesame oil
    • 1/4 tsp 5-spice powder
    • 12 tsp water (to thin the mayo to your desired consistency)

  • For the Fries:

  • For the 5-Spice Mayonnaise:

    • 1 tsp toasted sesame oil
    • 1/4 tsp 5-spice powder
    • 1–2 tsp water (to thin the mayo to your desired consistency)

Notes

  • Toast the Sesame Seeds:
    • Heat a wide, shallow pan over low heat and add the white and black sesame seeds.
    • Toast the seeds, tossing every 2–3 minutes, for about 5–7 minutes until fragrant and slightly golden.
  • Cook the Fries:
    • Cook the fries according to package instructions. For air frying, cook at 180°C (350°F) for 12–13 minutes, or until golden and crispy.
  • Make the Sauce:
    • While the fries are cooking, heat 2 tbsp of neutral oil in a pan over medium heat.
    • Add the minced garlic and sauté until fragrant and just turning golden.
    • Stir in the gochujang, light soy sauce, rice vinegar, sugar, and white pepper. Combine well.
    • Add the toasted sesame seeds and stir. Turn off the heat and finish with 2 tsp toasted sesame oil.
  • Combine Fries and Sauce:
    • Toss the cooked fries in the sauce until evenly coated. Add the spring onion greens and toss again.
  • Prepare the 5-Spice Mayonnaise:
    • In a small bowl, mix the mayonnaise, toasted sesame oil, and 5-spice powder. Thin with water to achieve a drizzleable consistency.
  • Serve:
    • Serve the saucy fries immediately, drizzling with 5-spice mayonnaise or keeping it on the side for dipping.
