  • ¼ cup brown sugar
  • ¼ cup unsalted butter, melted

For the Topping:

  • 1 cup fresh strawberries, diced

Instructions

  • Make the Cookies: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
    • In a large bowl, cream together butter and sugar until light and fluffy.
    • Add the egg and vanilla extract, mixing well. Gradually add the flour, baking powder, and salt until combined.
    • Roll the dough into balls, slightly flatten them, and place them on the baking sheet. Bake for 10-12 minutes, or until edges are set. Let cool completely.
  • Prepare the Cheesecake Frosting: In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Add heavy whipping cream and beat until fluffy.
  • Make the Crumble Topping: Mix flour, brown sugar, and melted butter until crumbly. Toast in a 350°F oven for 5 minutes until golden brown.
  • Assemble the Cookies: Spread cheesecake frosting over each cooled cookie. Sprinkle with crumble topping and fresh diced strawberries.
