A sweet, fruity filling of fresh strawberries, topped with a buttery, crumbly oat topping, this strawberry crumble is the perfect summer dessert. Serve it warm with vanilla ice cream or whipped cream for an extra indulgence.

  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar, packed

  • 1/2 cup unsalted butter, cold and cubed

Instructions

Prepare the Filling:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease or line an 8×8-inch baking dish with parchment paper.
  2. Mix the Filling: In a large mixing bowl, combine the sliced strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until the strawberries are evenly coated.
  3. Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it out evenly.

Make the Crumble Topping:

  1. Combine Dry Ingredients: In a medium bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Mix well.
  2. Cut in the Butter: Add the cold, cubed butter to the dry mixture. Use a pastry cutter or your fingers to cut the butter into the mixture until it resembles coarse crumbs.

Assemble and Bake:

  1. Top with Crumble: Sprinkle the crumble topping evenly over the strawberry filling.
  2. Bake: Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.

Cool and Serve:

  1. Cool: Let the strawberry crumble cool for 10-15 minutes before serving.
