  • 1 medium sweet potato
  • 1 lb (450g) chicken breast or thighs, cut into pieces
  • 1 bunch asparagus, trimmed
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp paprika
  • ½ tsp Italian seasoning

Instructions

Bake the Sweet Potato:
Preheat oven to 400°F (200°C). Wash the sweet potato, pierce with a fork, and bake for 45-50 minutes until soft. Once baked, slice open and add butter, salt, and pepper.

2️⃣ Season & Cook the Chicken:
In a bowl, mix chicken with 1 tbsp olive oil, garlic powder, dried parsley, paprika, salt, and black pepper. Heat a pan over medium heat and cook the chicken for 4-5 minutes per side until golden brown and fully cooked.

3️⃣ Sauté the Asparagus:
In the same pan, add 1 tbsp olive oil and asparagus. Season with Italian seasoning, salt, and pepper, and sauté for 3-4 minutes until tender but still crisp.

4️⃣ Assemble & Serve:
Plate the grilled chicken with the baked sweet potato and sautéed asparagus. Enjoy your healthy and delicious meal!

Notes

  • You can substitute the chicken breast with chicken thighs for a juicier result.
  • For extra flavor, you can add a drizzle of balsamic glaze over the asparagus.
