Ingredients

Scale

For the Fries:

  • 2 tsp paprika
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 lb frozen French fries
  • ¼ tsp cayenne pepper (optional, for heat)

For the Nacho Cheese Sauce:

  • 1 tbsp salted butter
  • 1 tbsp all-purpose flour
  • 1 cup whole milk
  • 8 oz sharp cheddar cheese, shredded
  • 1 tbsp pickled jalapeño brine (from jarred jalapeños)
  • ¼ tsp chili powder

Instructions

  • Prepare the Fries:

    • Preheat your oven to 450°F (230°C).
    • Spread the frozen fries in a single layer on a baking sheet.
    • In a small bowl, mix paprika, salt, chili powder, garlic powder, onion powder, and cayenne pepper.
    • Sprinkle the seasoning evenly over the fries, tossing to coat.
    • Bake according to package instructions (usually 25-30 minutes), until crispy and golden brown.
  • Make the Nacho Cheese Sauce:

    • In a medium saucepan, melt butter over medium heat.
    • Whisk in flour and cook for 1 minute to form a roux.
    • Gradually whisk in milk, ensuring no lumps, and cook until slightly thickened (about 3-5 minutes).
    • Reduce heat to low, add shredded cheddar cheese, and stir until melted and smooth.
    • Mix in pickled jalapeño brine and chili powder for extra flavor. Keep warm.
  • Assemble and Serve:

    • Remove fries from the oven and let cool slightly.
    • Serve the seasoned fries with warm nacho cheese sauce on the side for dipping.

Notes

  • For extra heat, top your fries with additional jalapeños or drizzle extra jalapeño brine over the cheese sauce.
  • Use shredded Mexican cheese blend for a richer nacho cheese sauce.
  • If you want crispier fries, try cooking them in an air fryer for a golden crunch.
