Ingredients

Scale

For the Marinade:

  • ¼ cup olive oil
  • ¼ cup soy sauce (low sodium)
  • 2 tbsp honey
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • ½ tsp salt

For the Chicken:

  • 2 lbs chicken thighs or breasts (bone-in or boneless, skin-on or skinless)
  • Fresh herbs (optional, for garnish — parsley, cilantro, or rosemary)

Instructions

  • Prepare the Marinade:
In a medium mixing bowl, whisk together the olive oil, soy sauce, honey, lemon juice, Dijon mustard, minced garlic, paprika, dried oregano, black pepper, and salt until fully combined.

  • Marinate the Chicken:
Place the chicken thighs or breasts in a large zip-top bag or shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, but preferably 2-4 hours, to allow the flavors to soak in.

  • Preheat the Oven or Grill:
Preheat the oven to 400°F (200°C) or preheat the grill to medium-high heat.

  • Cook the Chicken:
    Oven Method:
Place the marinated chicken on a baking sheet lined with aluminum foil or parchment paper for easy cleanup. Bake in the preheated oven for 25-30 minutes (20-25 minutes for boneless chicken) or until the internal temperature reaches 165°F (74°C). For a crispy, caramelized finish, broil for an additional 2-3 minutes, watching carefully to avoid burning.

    Grill Method:
Place the marinated chicken on the preheated grill. Grill for 6-8 minutes per side for boneless chicken or 8-10 minutes per side for bone-in chicken, until the internal temperature reaches 165°F (74°C). Adjust cooking time as needed based on the thickness of the chicken pieces.

  • Rest the Chicken:
Remove the chicken from the oven or grill and let it rest for 5-10 minutes before slicing. This helps the juices redistribute, ensuring the chicken stays juicy and tender.

  • Serve and Enjoy:
Garnish with fresh herbs like parsley, cilantro, or rosemary, if desired. Serve hot with your favorite sides, and enjoy “The Best Chicken Ever!”

Notes

  • For extra flavor, marinate the chicken overnight.
  • This chicken pairs well with a variety of sides, including rice, roasted vegetables, or a fresh salad.
  • Adjust the seasoning based on your taste preferences. If you like a bit of heat, add some chili flakes to the marinade.
