  • 1 large egg + 2 egg yolks
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour

  • 1/2 tsp salt
  • 1 cup Valentine’s Day candies (e.g., M&M’s or candy hearts)
  • 1/2 cup mini heart-shaped peanut butter cups

Instructions

  • Preheat and Prepare Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease and line a 9-inch pie dish or springform pan with parchment paper.
  • Make the Cookie Dough:
    • In a large bowl, whisk together the melted butter, light brown sugar, and granulated sugar until smooth.
    • Add the egg and egg yolks, one at a time, mixing well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually fold the dry ingredients into the wet mixture until fully combined.
  • Incorporate the Candies:
    • Gently fold in half of the Valentine’s Day candies and mini heart-shaped peanut butter cups, reserving the rest for topping.
  • Assemble the Cookie Pie:
    • Press the cookie dough evenly into the prepared pan.
    • Scatter the reserved candies and peanut butter cups on top, pressing them slightly into the dough.
  • Bake:
    • Bake for 25-30 minutes, or until the edges are golden brown and the center is just set.
    • Avoid overbaking for a soft and chewy texture.
  • Cool and Serve:
    • Allow the cookie pie to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
