- 120 g chickpea aquafaba, reduced to 80 g
- 1/4 teaspoon cream of tartar
- 70 g granulated sugar
- 100 g finely ground blanched almond flour
- 100 g powdered sugar
- 1/2 teaspoon vanilla extract
- 1 to 2 drops gel food coloring, optional
- 1 small pinch fine salt
Instructions
- Preheat the oven to 300°F and line two baking sheets with parchment paper or silicone mats.
- Sift the almond flour, powdered sugar, and salt together twice, then set aside.
- Add the reduced aquafaba and cream of tartar to a clean bowl. Whip until foamy, then gradually add the granulated sugar.
- Continue whipping until the mixture forms glossy, firm peaks.
- Add vanilla extract and optional gel food coloring, then gently fold in the dry mixture in small additions.
- Fold until the batter flows slowly in ribbons, then transfer it to a piping bag fitted with a round tip.
- Pipe even circles onto the prepared trays, then tap the trays gently to release air bubbles.
- Rest the shells for 45 to 60 minutes, until the tops feel dry to the touch.
- Bake for 16 to 18 minutes, rotating the trays halfway through.
- Cool completely before removing from the tray, then fill as desired.
Notes
- Use a kitchen scale for the most reliable results.
- Avoid baking on very humid days because the shells may not dry properly.
- Let filled macarons mature in the fridge for 12 to 24 hours for the best texture.
