1 lb ground beef
Chili powder, cumin, garlic powder, onion powder (to taste)
1 can black beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes & green chilies, undrained
2 cups shredded cheddar cheese
1 red onion, finely chopped
Fresh cilantro, chopped (for garnish)
Sour cream (for serving)
Jalapenos, sliced (optional, for garnish)
Tortilla chips
Instructions
Preheat your oven to 400°F (200°C).
In a skillet, cook ground beef with chili powder, cumin, garlic powder, and onion powder until browned. Drain excess grease.
Add black beans, corn, and diced tomatoes with green chilies to the beef mixture. Stir to combine.
On a baking sheet, layer tortilla chips, then top with the beef mixture and shredded cheddar cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and top with red onion, cilantro, sour cream, and sliced jalapenos (if using).
