  • 1 lb ground beef
  • Chili powder, cumin, garlic powder, onion powder (to taste)
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes & green chilies, undrained
  • 2 cups shredded cheddar cheese
  • 1 red onion, finely chopped
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (for serving)
  • Jalapenos, sliced (optional, for garnish)
  • Tortilla chips

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a skillet, cook ground beef with chili powder, cumin, garlic powder, and onion powder until browned. Drain excess grease.
  • Add black beans, corn, and diced tomatoes with green chilies to the beef mixture. Stir to combine.
  • On a baking sheet, layer tortilla chips, then top with the beef mixture and shredded cheddar cheese.
  • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and top with red onion, cilantro, sour cream, and sliced jalapenos (if using).
  • Serve and enjoy!

Notes

  • Spice it up with additional chili powder or more jalapenos.
  • Substitute ground beef with turkey, chicken, or chorizo for a different flavor.
  • For a vegetarian version, omit the meat and double the beans and corn.
